Carrot, Feta & Pistachio Salad with Orange Blossom Toss


INGREDIENTS


2 tablespoons olive oil
3 tablespoons red wine vinegar
1 1/2 teaspoons orange blossom water
2 teaspoons honey
1/4 teaspoon ground cumin
1/4 teaspoon ground cardamom
1/4 teaspoon crushed red pepper flakes plus more for garnish
1/4 teaspoon sea salt  
10 carrots washed and tops trimmed and reserved
1 cup coarsely chopped mint leaves plus more for garnish
2/3 cup chopped toasted pistachio nuts
2/3 cup crumbled feta


INSTRUCTIONS

Make the orange blossom toss: combine the oil, vinegar, orange blossom, water, honey, cumin, cardamom, the 1/4 teaspoon red pepper flakes, and the salt in a jar, seal, and shake to blend. Alternately, whisk the ingredients in a small bowl and set aside.

Make the salad: Use a vegetable peeler, mandoline, or spiralizer to slice the carrots into long, thin strips. Finely chop a handful of carrot tops (resulting in about 1/4 cup). Place the carrot strips and carrot tops in a large salad bowl.

Add the mint and pistachios, and our the dressing over all. Toss to combine. Gently fold in the feta. Top with mint and extra red pepper flakes, if you want an additional kick of spice.

Indian Spiced Lemonade

Ingredients :

For the Jal Jeera Mixture :
1. Cumin Seeds - 1 tablespoon
2. Fennel Seeds - 1 tablespoon
3. Min leaves - 1 cup, chopped
4. Cilantro Or Coriander Leaves
     - 1/2 cup chopped
5. Black Pepper Corns - 5 to 6 OR black
    Pepper Powder - 1/2 teaspoon
6. Ginger - 1/2" long piece
7. Rock Salt - to taste or 1 teaspoon
8. Sugar - 1 teaspoon
9. Asfoetida Or hing - 1/4 teaspoon
    10. Aamchur Or Dry Mango powder
          or Tamarind Pulp - 1 teaspoon
For Jal Jeera Drink :
     1. Chilled Water - 4 cups
    2. Lemon/Lime Juice - 
        of 1 large lemon/lime
Method :-
    1. Take a small spice grinder and add all the ingredients under
        the heading of "Jal Jeera mixture", add 2 tablespoons of
        water and grind them to make a fine paste.
    2. Now take a large mixing bowl, add the freshly made
         "Jal Jeera Mixture", 4 cups of water, lemon/lime
         juice and mix all together.
    3. Strain the mixture through a tea strainer. Pour into
        glasses, garnish with lemon/lime slices, mint leaves
        & ice-cubes and serve.

Minty Mango Drinks

Ingredients :
1. resh Mint Leaves, 1 Cm Cubes Test 6-7 Sprigs
2. Salt To Taste
3. Rock Salt ‘Sendha Namak’ To Taste
4. Roasted Cumin Powder 2 Teaspoons
5. Powdered Sugar 1 Cup
6. Black Peppercorns, Crushed 1 Teaspoon
7. Lemons, Cut Into Roundels 2
8. Raw Mango 1 Kilogram
Method of cooking :-
1. Place Serving Glasses In A Refrigerator To Be Chilled.
    Boil And Peel Raw Mangoes And Extract The Pulp.
    Keeping Aside A Few Mint Leaves For Garnish, Grind
    The Rest. In A Pan Mix Raw Mango Pulp, Sugar, Salt,
    Rock Salt And Two Cups Of Water.
2. Cook On High Heat For A Minute. Add Crushed
     Peppercorns, Roasted Cumin Powder And Ground
     Mint Leaves. Stir And Cook For Two To Three Minutes.
       Remove From Heat And Pass The Mixture Through A Sieve.
 3. Coat The Rims Of The Chilled Glasses With A Piece Of Lemon
     And Dab Them On A Bed Of Salt. Pour The Prepared Drink
     Into The Glasses. Top It With Chilled Soda. Garnish With The
     Reserved Mint Leaves And A Lemon Wedge And Serve Chilled.

Ingredients:
For Salad:
1. 6 ounces mixed baby salad greens
(Mixed lettuce, sliced cucumber, tomato wedges,
  sliced carrot and capsicum)
2. 1 cup seasonal fruit cut
For Dressing:
1. 1/4 cup Pomegranate Juice
2. 1 teaspoon lemon juice
3. 1/2 teaspoon sugar
4. 1/4 cup mayonnaise
5. 2 tablespoons extra-virgin olive oil
Method :-
1. Toss together all salad ingredients in large bowl.
    Arrange on a salad plate.
2. Whisk together pomegranate juice, lemon juice
    and sugar in small bowl.
3. Add mayonnaise and oil.
4. Whisk until smooth and creamy.
5. Drizzle over salads.

Banana Bliss

Ingredients :-

1. 2 ripe banana halved lengthwise.

2. Strawberry jam 1 cup (You can use Sugar Free)
3. Vanilla ice-cream Or Vanilla Flavored frozen yoghurt
    2 scoops
4. Curd 100gram well beaten with 2 tablespoons of
    powdered sugar
5. Chopped nuts like walnut, pecan, cashew
6. Chocolate curl for decoration
7. Lemon juice 2 tablespoons.
Method :-
1. Place each half on each small plate and add some lemon
    juice on it.
2. Pour 2 tablespoon curd, some jam, 1 scoop ice-cream Or
    frozen yoghurt on banana.
3. Now sprinkle some chopped nuts and some chocolate curls
    on banana and serve it.
4. Decorate the banana on your own way.
Serving Tips :-
Serve immediately before the Ice-cream /yoghurt melts.

Watermelon & Cucumber Lemonade

Watermelon & Cucumber Lemonade

Ingredients :-

1. Watermelon chunks - 2 cups, previously frozen
2. Fresh  Cucumber chunks - 1 cup
3. Mint leaves - 1/2 cup, chopped
4. Ginger, grated - 1/2 teaspoon(optional)
5. Honey Or Agave Nectar - 1 tablespoon, adjust to
     your taste
6. Lemon Juice - of 2 large lemon
7. Ice-cubes & mint leaves - to garnish
Method :-
1. Take watermelon, cucumber, mint & grated ginger
     in a blender and blend for 2-3 minutes.
2. Make sure there are no chunks left in the puree.
3. Transfer the puree through a large strainer set over
     a large pot, stirring occasionally until most of the
     liquid has dripped through.
4. Now add Lemon juice & Sweetener according to your
     taste, mix well. Pour into serving glasses and serve
     with ice-cubes & mint leaves on the top.

Mango Lassi

Ingredients :

1. Mango - 1 ripe peeled and chopped
2. Yoghurt - 1 cup
3. Water - 1/2 cup
4. Rock Salt - 1 pinch
5. Sugar - 2 tablespoons
6. Vanilla Ice-Cream - 2 scoops
7. Cardamom Powder - 1/8 teaspoon
8. Pista - 1 tablespoon chopped
9 Saffron threads - 1/8 teaspoon for garnishing

Method :-
1. Blend the mangoes, yoghurt, ice-cream, rock
    salt and sugar.
2. Adjust sugar according to taste. (Sugar amount
    will depend on the sweetness or sourness of the
    mango and yogurt) .
3. Add cardamom powder & water and blend again.
    Pour in tall glass and garnish with chopped
    pista & saffron threads. Serve chilled.

Serving Tips

Before serving add some chopped pistachios & saffron 

on the top of lassi.

Notes

Mango can be replaced by any juicy fruits, you want.

Peanut and Banana Salad

Peanut and Banana Salad

Ingredients :-

Pre-soaked Peanuts                        -100 gms
Pre-soaked Dates or
Dry Grapes (Kismis)                       - 50 gms.
Ripe Banana                                       -2 Nos.
Apple                                                     - 1 Nos.
Cardamom Powder                         - 1/4th teaspoon

Method :-

1. Presoak Peanuts, Dates or Dry Grapes as per the required quantity
    in water for 6 to 8 hours and make small pieces of the above except
    soaked grapes.
2. Cut Apple and Banana into pieces and add to the above nut pieces
    or dry grapes.
3. Add cardamom powder for taste.
4. Dress the salad with honey.
5. Refrigerate and serve chilled.

Note :

The above fruit salad recipe is for a normal healthy person. In case 
of acidity, Poor digestion it should be avoided or taken a little 
quantity.

Orange and Walnut Salad

Orange and Walnut Salad

Ingredients :-

Oranges                                             - 3 medium
Walnuts                                              - 50 gms.
Honey or
Jaggery Powder                                - 2 tespoons
Cardamom Powder                          -1/4th teaspoons

Method :-

1. Remove peel and slice three oranges very thin.
2. Chop or slice walnuts, use one teaspoonful for
    each orange.
3. Sprinkle walnuts on thin slices of oranges, add
    2 tea spoonful of honey or jaggery powder on
    slices.
4. Add cardamom powder for test end flavour, if
     necessary.

Note :-
             This  is recommended in soothing and constructive
stage of the treatment period in Nature Cure and also can
be taken by a healthy normal person with good digestion.

Pineapple and Cheese Salad

 Ingredients :-

Lettuce or cabbage leaves                          -50gms. (3 or 4).
Pineapple slices (fresh)                               -400 gms.
Cheese                                                                -100 gms.
Soaked and diced peanuts                         -50 gms.
Pineapple juice                                               -50 ml.

Method :-

1. Garnish small four plates with fresh lettuce or cabbage leaves.
2. Place the slices of pineapple in the centre of the plate and
    place fresh cheese grates on the top to cover the fruit to with
    in an inch of the edge.
3. Sprikle with diced pre-soaked peanuts and place black or white
    grapes one or two in the centre.
4. Pour some pineapple juice on all plates and serve chilled or normal.

Papaya or Mango cut fresh pieces      -300
Chikku or Sapota                                        -3 or 4 medium size
Dates diced                                                    -50 gms.
Dry Coconut Scrap                                    -2 or 3 teaspoons
Rose Water                                                   -2 or 3 drops
Cabbage leaves                                            -50 gms.(4 or 5).

Method :-

1. Cut or slice fruits.
2. Place cabbage leaves on place and put cut slices of fresh mango
     or papaya then chikku slices.
3. Put diced dates small pieces on the top.
4. Sprinkle coconut scrap on the fruits.
5. Finally put 2/3 drops of rose water in each plate.

Bran Drink

Ingredents:-
  
Wheat bran or Rice bran            - 2 tablespoon
Water                                                  - 4 cups
 Milk                                                    - 1 cup
 Jaggery syrup                                - 3 teaspoon

Method:-
     
Boil four cups of water and add two tablespoon of wheat 
or raw rice bran and keep on simmer for 5 minutes. Put 
off the fire and srain the liquid. Add milk and jaggery syrup.
Serve and drink warm.

It is very useful for persons suffering from vitamin B 6 and 
12 deficiency having mouth ulcer and general weakness. 
It is also very useful for rice eater. Who dislikes brown rice to eat.

Ingredients :- It is a healthy drink useful for all.
     
  Wheat germ                                  -50 gms.
  Milk                                                  - 4 cups (fat free)
  Jaggery syrup                              - 4 tea spoons

  Cardamom powder                   - 1 pinch (optional)
   
Method :-

Boil 4 cups of  milk (fat free) adding 1 cup of water.Add 50 
grams of wheat germ and cook till it becomes soft. Add 
Jaggery syrup , mix thoroughly adding cardamom powder 
and serve hot.

Which aids in food assimilation and protein and fat 
metabolism.It also prevent nervous and skin disorder, 
regulates sodium and potassium leveis in the body.

for normal reproductory functions and prevents blood
clots which is uesful to prevent heat diseases, ashma and 
other many conditions.
